Dandelion Salad, Mifflin

This is a pretty, as well as tasty summertime salad.

1 Pound(lb)  young dandelions
3 Slice(sli)  lean bacon
2   egg yolks
1 Tablespoon(T)  sugar
1/2 Pint(pt)  sour cream
1/2 Teaspoon(t)  salt
1/4 Teaspoon(t)  pepper
1/2 Teaspoon(t)  english mustard
1 Teaspoon(t)  flour
2 Tablespoon(T)  vinegar


Dice the bacon and fry until crisp. Mix the other ingredients (dissolving the dry mustard in a little of the vinegar), and add to the bacon in the pan. Stir constantly, and when it starts to boil add quickly the well cleaned dandelions, which do not scald. Serve hot with sliced hard boiled eggs.
