Maple and brown sugar make the perfect baking partners in oatmeal cookies. These are are simple and taste specatcular.

1/4 Cup(c)  pure maple syrup
1 Cup(c)  soy or other non dairy milk
1 Teaspoon(t)  pure vanilla extract
1/2 Cup(c)  brown sugar, firmly packed
1/2 Cup(c)  non dairy butter
1/4 Teaspoon(t)  salt
1/4 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  cinnamon,ground
2 Cup(c)  all purpose flour
2 Cup(c)  quick cooking oats


Preheat the oven to 350° F. Line 2 baking sheets with parchment paper or silicone baking mats. In a mixing bowl, mix together the oats, flour, cinnamon, baking soda, baking powder and salt. In a separate bowl, using an electric mixer, beat together the butter and brown sugar until fluffy. Add the vanilla. Continue to beat for another minute. Add the milk and syrup and beat until creamy. Add the wet ingredients to the dry and stir to combine. Spoon drop about 2 tablespoons of the cookie dough onto the prepared baking sheets about 2 inches apart. Bake 12 to a sheet. Bake for 12 minutes, or until the edges are beginning to brown. Remove from the oven and let cool for 5 minutes before transferring to a rack to cool completely.
