8 Ounce(oz)  dates, coarsely chopped (use kitchen scissors)
1 Cup(c)  boiling water
1 Teaspoon(t)  baking soda
1 Cup(c)  sugar
2 Tablespoon(T)  butter
1   large egg
1/2 Teaspoon(t)  vanilla extract
1/2 Teaspoon(t)  salt
1 1/2 Cup(c)  all purpose flour
1/2 Cup(c)  walnuts, chopped


Place dates in a medium bowl. Mix boiling water and baking soda. Pour over dates and stir. Let stand for 1 hour. Preheat oven to 325°F. In a large bowl, using an electric mixer, beat sugar, butter, egg, vanilla and salt. Stir in dates and liquid. Add flour and nuts and mix well. Pour mixture into a lightly sprayed or oiled 4 1/2 by 8 by 2 1/2 inch loaf pan. Bake until a toothpick inserted in the center comes out clean, about 60 minutes. Cool in pan on a rack for 10 minutes. Run a knife around edges and remove bread from pan. When cool, wrap in aluminum foil to store.
