Ingredients

1 Tablespoon(T)  olive oil
1/2 Cup(c)  finely chopped onion
1 Tablespoon(T)  curry powder
1 Cup(c)  frozen vegetable burger crumbles, thawed
2 Cup(c)  mashed potatoes
1/2 Teaspoon(t)  salt
1/8 Teaspoon(t)  cayenne pepper
32   (3-to 4-inch) wonton wrappers
4 Tablespoon(T)  butter, melted

Preparation

Preheat oven to 375°F. In heavy saucepan, heat olive oil over medium heat. Add onion and curry powder; cook and stir for 4-5 minutes until onions are tender. Remove from heat and add crumbles, potatoes, sa lt, and pepper and stir together.

Place 6wonton wrappers on work surface. Place 1 tablespoon filling in center of wrapper. Brush edges of wrapper with water. Fold wrapper over filling, forming a triangle. Press edges to seal. Place on ungreased cookie sheet and brush with butter.

Bake for 8-12 minutes or until empanadas are light golden brown.

Cool for 15 minutes, then serve.

Additional notes

Wonton Wrappers :Wonton wrappers and egg roll wrappers come in various sizes. If you can only find the 7inch square wrappers, you can use them in this recipe. Simply cut each large wrapper into 4 equal squares;you'll need eight for this recipe.
