Ingredients

2 Cup(c)  rolled oats, quick cooking or regular
1 1/2 Cup(c)  all purpose flour
1/3 Cup(c)  pecans, finely ground
1 1/2 Tablespoon(T)  brown sugar
1/2 Teaspoon(t)  salt substitute
2/3 Cup(c)  water
1/2 Cup(c)  safflower oil
6 Tablespoon(T)  sesame seeds

Preparation

Crush the oats in a food processor.  Combine the crushed oats, flour and pecans.  Place brown sugar, and salt substitute in a large bowl.  Mix until well blended.  Add the water and oil, and blend thoroughly.  Preheat oven to 325°F.  Divide dough into 3 balls.  Place each ball on a 16 by 12 inch baking sheet that has been coated with nonstick cooking spray.  Roll the dough all the way to the edges.  This will be very thin.  Sprinkle the dough lightly with sesame seeds.  With a pastry or pizza wheel, cut the dough into 2 inch squares or diamonds.  Bake for 30 to 35 minutes, or until golden brown.  Remove carefully with a spatula.  Store in an airtight container for up to a month.  These may also be frozen.
