Recipe Description
You always want a morning meal on a Saturday or Sunday to taste special, but this flavorful, low fat dish makes the end of the week more than memorable.  It jump starts the day in a healthful way.

Ingredients

1 Pint(pt)  fresh strawberries
1   egg
2 Cup(c)  non fat buttermilk
2 Cup(c)  reduced fat all purpose baking mix

Preparation

Whisk together baking mix, buttermilk and egg in a bowl.  Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle or large nonstick skillet.  Cook pancakes 3 to 4 minutes, or until tops are covered with bubbles and edges look dry and cooked.  Turn and cook other side.  Spoon on fresh strawberries and serve with syrup.
