Recipe Description
Use any leftover corn to add smoky flavor to your favorite corn relish, corn muffins or corn pudding recipes. Although, you may want to make an extra ear or two, if you really hope to have any leftovers!

Ingredients

2 Cup(c)  mesquite wood chips
2 Tablespoon(T)  fresh dill weed, chopped
3 Tablespoon(T)  olive or vegetable oil
2 Clove(clv)  garlic, finely crushed
8   ears corn (with husks)

Preparation

Cover wood chips with water and soak 30 minutes. Drain wood chips. Prepare and heat smoker using wood chips. (For charcoal smoker, use 3 pounds charcoal briquettes.) Mix dill weed, oil and garlic. Remove large outer husks from each ear of corn. Turn back inner husks, and remove silk. Brush corn with dill weed mixture. Pull husks up over ears and tie with fine wire or twist ends to secure. Cover and smoke corn about 1 1/2 hours, or until tender.
