This simple recipe might be the answer for getting a few veggies into the kids! By combining peas and onions into kid favored mac and cheese, you might just win one round in the veggie war.

1/4 Cup(c)  butter
1 Cup(c)  onion, chopped
20 Ounce(oz)  macaroni and cheese mix
2/3 Cup(c)  milk
4 Tablespoon(T)  mustard
2 Cup(c)  frozen peas, thawed


In medium saucepan, melt butter over medium heat. Add onion and cook and stir until tender, about 5 minutes. Meanwhile, bring a large pot of water to boil. Add macaroni from package and cook according to package directions until al dente. Drain macaroni and return to pot. Stir in powdered mix from package, cooked onions with butter, milk, mustard and peas and stir until sauce is creamy, and mixture is hot. Serve immediately.

Boxed Dinner Mixes: There are several choices for boxed dinner mixes on the market. Often they are very good buys, especially when stores have them on sale for three boxes for a dollar. They can be "dressed up" with many ingredients, and are a particular bargain when you can add foods from your garden, like chopped tomatoes, bell peppers, zucchini or fresh herbs.
