Sweet and cinnamon spiced Dutch Cakes are great for breakfast, brunch, or even dessert.

1   yeast cake
5 Tablespoon(T)  sugar
1 Pinch(pn)  salt
2 Cup(c)  lukewarm milk
2   eggs, beaten
1/2 Cup(c)  butter, melted
1 Quart(q)  flour, sifted
1/2 Cup(c)  lukewarm water


Dissolve a yeast cake in 1/2 cup of lukewarm water. Add 1 tablespoonful of sugar, a little salt and flour to stiffen to a sponge. Let rise about 1 hour. Add 2 cups of lukewarm milk, 4 tablespoons of sugar, 1/2 cup of melted butter, 2 eggs beaten whole and 1 quart of sifted flour, enough to make a soft sponge. Let rise again. Roll out, spread with a mixture of butter, sugar, and cinnamon. Cut into strips and roll up from one end. Place in pans and let rise a third time, then bake in a 400 degree F oven for 12 to 15 minutes.
