Dutch Fish And Macaroni Casserole

Tender and flaky boiled fish is added to a hearty macaroni casserole dish. The addition of mushrooms makes this a meal with all the major food groups utilized.

1/2 Pound(lb)  macaroni
3 Quart(q)  water
1 Tablespoon(T)  salt
2 Pound(lb)  boiled fish
1/4 Cup(c)  parmesan cheese, grated
1/2 Cup(c)  white wine
1 Tablespoon(T)  flour
1 Pint(pt)  cream
2 Tablespoon(T)  lemon juice
1 Pinch(pn)  pepper
1/2 Cup(c)  mushrooms, sliced
1/4 Pound(lb)  butter
1 Pinch(pn)  salt, to taste


Boil the macaroni in salt water after breaking into inch long pieces. Clean the fish, dress and boil in salt water. Take out the skin and bones and cut the fish into small pieces. Butter a baking dish, fill with a layer of macaroni, then fish and Parmesan cheese and mushrooms. Sprinkle with white wine. Repeat this 3 times, but have the last layer as macaroni. Make dressing of 1/8 pound of melted butter into which the flour, cream, lemon juice, salt and pepper are stirred. Pour over the macaroni, the 1/8 pound of butter cut in small pieces, sprinkled over the top and bake in moderate 350 degree F oven until heated through.
