Recipe Description
There is no denying that black beans make a dramatic looking garnish over fish and poultry, or in combination with other vegetables. The trick with this recipe, is to keep the beans whole and perfect looking, while at the same time being sure they are thoroughly cooked.

1 Cup(c)  cooked black beans, drained and rinsed
2 Tablespoon(T)  olive oil
1/2 Cup(c)  tomato, diced
1 Tablespoon(T)  fresh lemon juice
2 Tablespoon(T)  fresh cilantro, chopped
1 Pinch(pn)  salt, to taste

Preparation

In a bowl, combine the beans, olive oil, tomato, lemon juice and cilantro. Toss well. Season to taste with salt. Refrigerate until ready to use.
