Easy Cajun Vegetable Gumbo

This spicy, slow cooker gumbo is a cinch to prepare, and will definitely give your taste buds a Louisiana-style treat!

Ingredients

30 Ounce(oz)  black beans, drained and rinsed
28 Ounce(oz)  tomatoes, diced
16 Ounce(oz)  frozen stir fry vegetables
1 1/2 Cup(c)  frozen okra, cut
2 Teaspoon(t)  cajun seasoning
1 Tablespoon(T)  hot cajun seasoning
2 Cup(c)  rice, cooked (optional)

Preparation

In 3 1/2 to 4 1/2 quart slow cooker, combine black beans, tomatoes with their juices, frozen stir fry vegetables, frozen okra and Cajun seasonings.  Cover slow cooker.  Cook on low heat setting for 6 to 8 hours, or on high heat setting for 3 to 4 hours.  10 minutes prior to eating, add cooked rice and sir into slow cooker.  This ensures that rice won't disinigrate if left all day.
