Recipe Description
A complete meal in one pot.  Omit the cayenne pepper and crushed red pepper if you don't like spicy food.  You can also decrease or omit the salt if you are trying to cut down on your sodium intake.

1/8 Teaspoon(t)  crushed red pepper (optional)
1/4 Teaspoon(t)  cayenne pepper (optional)
1/2 Teaspoon(t)  thyme
1 Teaspoon(t)  salt
1   medium onion, diced
1   large stalk celery, sliced
3   large carrots, cut in 1/4 inch slices
2 Quart(q)  water
1/2 Cup(c)  barley
6   chicken breasts, skinned


Combine all ingredients in a large soup kettle.  Bring to a boil, then reduce heat and simmer for 2 1/2 hours.
