Lunch doesn't get much easier than this. Better yet, this recipe uses leftover chicken, so you can clean out the refrigerator in the process.

Ingredients

3 Cup(c)  leftover chicken, cubed
5 1/2 Cup(c)  celery, chopped
1 Teaspoon(t)  salt
2   hard cooked eggs
3/4 Cup(c)  mayonnaise
6   crisp lettuce leaves

Preparation

Combine chicken, celery and salt. Cut up egg, saving 3 or 4 perfect slices for a garnish. Add egg to other ingredients and mix well with mayonnaise. Serve on crisp lettuce if available, or as a sandwich filling.
