Recipe Description
The secret is to slice the collard greens paper thin, using the roll and cut method below. Even if you don't think you'll like collard greens, give this simple side dish a try. You may be pleasantly surprised.

3 Clove(clv)  garlic, minced
1   small onion, finely chopped
5 1/2 Tablespoon(T)  olive oil
1/4 Cup(c)  water
1 Bunch(bn)  collard greens (about 1 1/2 pounds), stems removed
1 Pinch(pn)  black pepper, ground, to taste
1 Pinch(pn)  salt, to taste


Roll up the collard green leaves lengthwise into a tight tube. Using a sharp knife, cut the tube crosswise into extremely thin slices. Fluff the slices in a large bowl and sprinkle with the water. Heat the oil in a large nonstick skillet over high heat. Add the onions and garlic. Cook for 20 seconds, or until fragrant but not brown. Add the collard greens and season with salt and pepper. Cook, stirring often, for 2 minutes, or until the greens are just tender. (Do not overcook. The collards should remain bright green.) Season with additional salt and pepper, if desired.
