1/4 Cup(c)  butter, melted
1 Cup(c)  butter, cold
1   egg, beaten
5 Cup(c)  all purpose flour
1   egg
1/3 Cup(c)  sugar
1 Package(pk)  active dry yeast
1 Cup(c)  warm water (about 110°f)
1 1/2 Teaspoon(t)  salt
3/4 Cup(c)  evaporated milk


In a bowl, combine yeast and warm water.  Let stand until yeast is softened, about 5 minutes.  Add milk, salt, sugar, egg and 1 cup of the flour.  Beat until smoothly blended.  Stir in melted butter, then set aside.  Place remaining 4 cups flour in a large bowl.  With a pastry blender or 2 knives, cut in the 1 cup cold butter until mixture resembles very coarse crumbs.  Pour yeast mixture over top and stir gently just until all flour is moistened.  Cover with plastic wrap and refrigerate until cold, at least 4 hours, or for up to 4 days.  Turn dough out onto a floured board and knead lightly to release air.  Divide dough into 4 equal pieces.  Shape one piece at a time.  Keep remaining dough covered in refrigerator until all dough has been shaped.  To shape croissants:  Place one piece of dough on a floured board and roll out to a 17 inch circle.  Using a knife, cut circle into 8 equal wedges.  Beginning at wide end, loosely roll each wedge toward point, then shape each roll into a crescent.  Place crescents, point down and 1 1/2 inches apart, on ungreased baking sheets.  Cover rolls and let rise at room temperature until almost doubled, about 2 hours.  Do not speed rising by placing rolls in a warm place.  Brush with egg mixture.  Bake in 325 degree F oven until lightly browned, about 35 minutes.  Serve warm.
