When I was living in New England, my neighbor made the best tasting fish cakes.  This is her simple and delicious recipe.

6   potatoes, peeled
2 Cup(c)  salted fish, cooked and finely chopped
2 Tablespoon(T)  butter
4 Tablespoon(T)  milk
1   egg
1 Pinch(pn)  pepper, to taste


Boil potatoes until tender.  Drain and mash together with the fish until very light and fine.  Add the butter, milk, egg and pepper to taste.  Drop by spoonfuls into hot fat and fry brown.
