Easy Garlicky Olives

Recipe Description
I make lots and lots of these because they're irresistible, and, if by some miracle they're not eaten immediately, they keep for a few weeks.  Use anzanillo olives, which are small green Israeli olives with a distinctive peppery after bite.

Serves Tool

Serves To:USMetric
1 Teaspoon(t)  lemon rind, grated
3 Tablespoon(T)  garlic, sliced paper thin 1 (or more) jalapeno pepper(s), sliced
1/3 Cup(c)  extra virgin olive oil
12 Ounce(oz)  small green olives


Combine all the ingredients.  Let stand at least overnight, preferably 2 days, for the flavors to meld.  Toss occasionally.

Additional notes

Olives are Great

Olives are wonderful. I enjoyed this recipe, however, I did limit the jalapeno so it didn't overwhelm the olive flavor.
