Ingredients

1/2 Cup(c)  canola oil
2 Tablespoon(T)  brown sugar
2   egg whites, slightly beaten
1 Cup(c)  dark molasses
1 Cup(c)  boiling water
2 1/4 Cup(c)  unbleached or all purpose flour
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  ginger, ground
1 Teaspoon(t)  cinnamon, ground
1/8 Teaspoon(t)  allspice, ground

Preparation

Preheat the oven to 350° F. Lightly grease and flour an 8 inch square baking pan. In a large bowl, combine the oil, sugar and egg whites. Stir in the molasses and water. Sift together the flour, baking soda, ginger, cinnamon and allspice into a medium bowl. Stir into the molasses mixture. Pour into the prepared pan. Bake for 45 to 50 minutes. Cool before serving.
