1 Pinch(pn)  pepper, to taste
1 Pinch(pn)  salt, to taste
1   lime, juiced, or to taste
1 Tablespoon(T)  fresh cilantro, chopped, plus extra to garnish
1/4 Teaspoon(t)  cumin, ground
1 Clove(clv)  garlic, crushed
1   fresh poblano chile, seeded and finely chopped
1/2   onion, finely chopped
2 Teaspoon(t)  olive oil
2   large, ripe avocados


Cut the avocados in half lengthwise and twist the 2 halves in opposite directions to separate.  Stab the pit with the point of a sharp knife and lift it out.  Peel, then roughly chop the avocado halves and place them in a nonmetallic bowl.  Add the lime juice and the oil.  Mash the avocados with a fork until they are the desired consistency, either chunky or smooth.  Blend in the onion, chile, garlic, cumin and chopped cilantro, then season with salt and pepper to taste.  Transfer to a serving dish and serve immediately to avoid discoloration, sprinkled with fresh chopped cilantro.
