Recipe Description
Sweet potato casserole has become almost as traditional as the turkey, when it comes to the Thanksgiving diner table.  This recipe adds the sweet flavors of cranberries and brown sugar to this vegetable mainstay.

6   sweet potatoes
1/2 Cup(c)  dried cranberries
1/2   orange, zested
1 Teaspoon(t)  cinnamon, ground
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste


Pierce 6 small sweet potatoes with a fork.  Place on an aluminum foil lined jelly roll pan, and bake at 350 degrees F for 45 for 50 minutes, or until tender.  Cool slightly, then cut ends off potatoes.  Stand each potato on larger end in a small bowl or ramekin.  Squeeze potato, pushing pulp upward, and fluff with a fork.  Add cinnamon and orange zest.  Once combined, mix in cranberries gently, and serve.
