Easy Hot Cheese Pastries

Recipe Description
Light, flaky and filled with an irresistible blend of cheeses, these pastries literally fly off the buffet table at parties.  You may want to double the recipe, as to have plenty on hand.

Ingredients

3 1/2 Cup(c)  olive oil
8   sheets authentic greek filo pastry
1 Pinch(pn)  pepper, to taste
2   eggs, beaten
3 Tablespoon(T)  fresh flat leaf parsley, chopped
1/2 Cup(c)  cottage cheese
7 Ounce(oz)  authentic greek feta cheese

Preparation

Crumble the feta cheese into a bowl.  Add the cottage cheese, parsley and eggs, and beat with a fork until well blended.  Season with pepper.  Cut the filo pastry down the longest length, into 2 3/4 inch strips.  Take one strip and brush it with olive oil.  Put a heaping teaspoon of the cheese mixture on the bottom left hand corner.  Fold over the corner with the filling so that it meets the long side edge and forms a triangle.  Continue folding the filling up and over from side to side to form a neat triangle.  Place tile pastry on an oiled cookie sheet and brush with oil.  Continue until all the pastry strips and the filling have been used.  Bake the pastries in a preheated 375°F oven for about 15 minutes, until golden brown.  Serve hot.
