Easy Mexican Meatloaf

Recipe Description
The salsa really perks up this meatloaf.  You don't need fresh salsa to prepare this.  A high quality jarred brand will work just fine.

1/2 Pound(lb)  10% fat ground beef
1/2 Teaspoon(t)  cumin, ground
1 Tablespoon(T)  white wine vinegar
2   egg whites
3 Clove(clv)  garlic, minced
2/3 Cup(c)  dry breadcrumbs
1 1/4 Pound(lb)  lean ground turkey
1/2 Cup(c)  salsa
1 Cup(c)  zucchini, shredded
1/4 Cup(c)  scallions, chopped
1/2 Teaspoon(t)  dried oregano
1 Teaspoon(t)  paprika
1/4 Teaspoon(t)  pepper, freshly ground
1/4 Teaspoon(t)  kosher salt


Combine all the ingredients except the salsa.  Using your hands, squeeze together almost as if kneading bread, until evenly mixed.  Divide into two portions.  Place each in an 8 by 4 inch loaf pan.  Up to this point, the meatloaves can be made up to 1 day ahead of time if wrapped tightly and stored in the refrigerator.  Preheat the oven to 350 degrees F. Top the meatloaves with salsa.  Bake for 50 minutes to 1 hour.
