3 Tablespoon(T)  butter, melted
1 1/2 Cup(c)  buttermilk
1   egg
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
1 Tablespoon(T)  baking powder
1/4 Cup(c)  sugar
1/2 Cup(c)  whole wheat flour
1 1/2 Cup(c)  all purpose flour

Preparation

Preheat the oven to 400° F. Grease 12 2 1/2 inch muffin cups. In a large bowl, stir together both flours, the sugar, baking powder, baking soda and salt. In a medium bowl, lightly beat the egg. Beat in the buttermilk and the butter until completely combined. Using a wooden spoon, stir liquid into dry ingredients until just moistened. Batter will be very thick. (Be careful not to over beat or the muffins will have tunnels.) Spoon 2 rounded tablespoons of the batter into each of the prepared muffin cups. Bake 25 to 30 minutes, or until lightly browned on top
