Recipe Description
Probably the simplest of all the soups and bisques is this oyster soup. It is favored by many as a good homemade dish. I remember it as a favorite dish in our home when I was a child. I used to watch my mother make it at the stove in what seemed a very short time for such a delicious soup.

Ingredients

1/2 Cup(c)  butter
1   rib celery, minced
1 Bunch(bn)  green onions, chopped
6 Tablespoon(T)  flour
1 Clove(clv)  large garlic, minced
1 Tablespoon(T)  parsley, minced
2   bay leaves
1 1/2 Quart(q)  liquid (the liquor from the oysters and enough milk to bring it to 1 1/2 quarts)
2 Teaspoon(t)  salt
1 Teaspoon(t)  white pepper, ground
24   raw oysters

Preparation

Melt the butter in a large saucepan and saute the celery arid green onions until they are limp, about 3 minutes. Blend in the flour and cook for 2 minutes more. Add the garlic, parsley and bay leaves. Blend in the oyster water and milk mixture. Bring to a boil and reduce to a simmer. Season with the salt and pepper. Simmer for 15 minutes. Add the oysters and simmer for only about 5 minutes more and serve.

Additional notes

Variation: The milk may make the soup a little too rich for some tastes. Fish or chicken stock can be used for a subtle and delightful variation.
