My mom made this pork loin roast for Christmas. We had all eaten so much turkey over the Thanksgiving holiday, we were ready for something different, and this roast was always a treat.

Ingredients

1/2 Teaspoon(t)  salt
4 Pound(lb)  boneless pork loin roast
1/3 Cup(c)  pepper relish
1/2 Teaspoon(t)  pepper
6   shallots, peeled and thinly sliced

Preparation

Tie a boneless pork loin roast at 2 inch intervals with kitchen string. Sprinkle with 1/2 tsp. each of salt and pepper. Place in an aluminum foil lined jelly roll pan. Bake at 375°F for 1 hour, or until a meat thermometer inserted into thickest portion registers 150°F. Stir together 6 shallots, peeled and thinly sliced, and 1/3 cup pepper relish. Spoon evenly over top of roast, and bake 10 to 15 more minutes or until shallots are tender. Let stand 10 minutes before slicing.
