This is a rich, thick, creamy, filling salmon chowder that goes great with fresh sourdough bread and butter.

Ingredients

12 Ounce(oz)  skinless, boneless salmon, drained
1/2 Cup(c)  all purpose flour
2 Cup(c)  half and half
2 Teaspoon(t)  dill, dried
5 Ounce(oz)  scalloped potato mix
1   medium onion, chopped
1 1/2 Cup(c)  water
3   medium carrots, thinly sliced
1 1/2 Cup(c)  whole kernel corn
28 Ounce(oz)  chicken broth

Preparation

In 6 quart slow cooker, combine chicken broth, corn, carrots, water, onion, dry potato mix with seasoning packet and the dill. Cover slow cooker. Cook on low heat setting for 6 to 8 hours, or on high heat setting for 3 to 4 hours. In medium sized bowl, whisk together half and half and flour. Gradually combine half and half mixture into vegetable mixture in slow cooker. Gently stir in salmon. Cover slow cooker. Cook for 20 to 30 minutes longer or until thickened.
