This is the perfect ice cream to serve during the holidays when everyone hungers for pumpkin and mincemeat pies. Makes an excellent pairing!

1/4 Cup(c)  egg white protein
1/2 Teaspoon(t)  liquid sweetener (sweet 'n low)
1/4 Teaspoon(t)  cinnamon
1/4 Teaspoon(t)  nutmeg
1/3 Cup(c)  splenda
1 1/2 Cup(c)  heavy cream
1 Teaspoon(t)  brandy extract (optional)
1 Teaspoon(t)  vanilla extract
1 Cup(c)  hot water
1 Package(pk)  unflavored, unsweetened gelatin


Sprinkle gelatin over hot water and let it set for a minute. Stir until gelatin is dissolved. With a mixer, blender, or food processor, combine extracts, cream, Splenda, nutmeg, cinnamon, Sweet'n Low, egg protein and gelatin water. Mix well and chill for at least l/2 hour. Stir and pour into your ice cream maker, following manufacturer's directions for making ice cream.
