Recipe Description
This au gratin is a lovely brunch offering, or can be served with a bright tomato salad as a light lunch. Simple and easy to prepare, especially if you have hard boiled eggs on hand.

Ingredients

2 Cup(c)  cooked elbow macaroni
4   hard boiled eggs, coarsely chopped
3/4 Tablespoon(T)  butter, melted
3/4 Cup(c)  sour cream
1   egg yolk
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  cheese, grated

Preparation

Combine the macaroni with eggs and butter. Place in a baking dish. Pour sour cream mixed with egg yolk and some salt over top. Sprinkle with cheese. Put under broiler for few minutes until golden.
