Recipe Description
Fluffy mashed potatoes are used to create little nests for baked eggs.  A great recipe for Christmas morning breakfast (kids love them), or a brunch with friends.

Ingredients

2 Tablespoon(T)  parsley, chopped
1 Dash(ds)  paprika
6   eggs
1   small onion, chopped and cooked in butter until transculent
1 Quart(q)  potatoes, mashed

Preparation

Leftover potatoes may be used if enough hot milk to make them soft and creamy is added.  Mix potatoes with onion and arrange in greased baking dish.  Make 6 indentations in top.  Into each drop an egg.  Sprinkle with paprika and bake in a moderate 350° F oven for about 15 minutes, until eggs are set.  Garnish with chopped parsley.
