Recipe Description
Brandy snaps are sensational cookies, originally introduced by the British. I must tell you these are sensational as I had them at a hotel I was staying at, and convinced the server to share the recipe.

Serves Tool

1 Cup(c)  whipped cream
3 Tablespoon(T)  brandy
1/3 Cup(c)  all purpose flour
1/2 Teaspoon(t)  ginger, ground
1/2 Cup(c)  corn syrup
1/2 Cup(c)  sugar
4 Ounce(oz)  butter


Stir all ingregients except whipping cream together and heat gently. Allow mixture to cool about 10 minutes. Pour mixture by spoonfuls into flat greased pan 3 to 4 inches apart. Bake at 350 degrees F until snaps flatten, about 6 to 8 minutes. Remove carefully with spatula. When slightly cooled, roll up into a tube. Stuff tubes with whipped cream using a pastry bag.
