Ingredients

2 Pound(lb)  cucumbers
3 Cup(c)  low sodium chicken stock
3 Cup(c)  plain non fat yogurt
3 Tablespoon(T)  white wine vinegar
1 Clove(clv)  garlic
1 Teaspoon(t)  salt
1/2 Teaspoon(t)  white pepper

Preparation

Wash but do not peel the cucumbers. Cut them into 1 inch chunks, and puree along with the remaining ingredients in a blender or food processor. Refrigerate at least 4 hours.
