Recipe Description
The English version of macaroni and cheese uses a simple white sauce and buttered breadcrumbs for the crunchy topping.

5 1/2 Cup(c)  macaroni
1 Pinch(pn)  salt
1 Cup(c)  thin white sauce
1/2 Cup(c)  cheese, grated
5 1/2 Cup(c)  buttered breadcrumbs


Prepare the macaroni by breaking into inch pieces. Drop it into boiling water to which has been added salt in the proportion of one tablespoonful to one quart. Cook until tender. Keep the water boiling rapidly and stir frequently to keep the macaroni from sticking to the bottom of the pan. When done, pour through a strainer. Set the strainer in a pan of cold water and wash the macaroni to remove the starch that causes the pieces to stick together. To the white sauce add the grated cheese and mix until blended and melted. Stir into this the macaroni, then pour into a buttered casserole and top with the buttered crumbs. Bake at 350° F for 20 to 25 minutes, until brown and bubbly.
