Recipe Description
In the nineteenth century, any visitor who came calling was likely to be offered a glass of Madeira wine and a slice of this cake, hence its name. Madeira Cake is a plain, moist cake and is, indeed, quite excellent served with a glass of wine or sherry.

8 Ounce(oz)  butter
1 Cup(c)  sugar
4   eggs
2 Cup(c)  flour
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  lemon peel, grated
3   citron peel strips


Preheat the oven to 325 degrees F. Grease a 8 inch loaf pan and set aside. Cream the butter and sugar. Beat the eggs in a bowl over a pan of hot water and add them to the butter and sugar. Sift the flour and baking powder in a separate bowl and fold them into the mixture. Add the lemon peel and pour the batter into the loaf pan. Smooth the top and bake for 30 minutes. Cut the citron peel into small pieces and arrange on top of the cake. Continue to cook the cake for another 30 minutes, or until a knife comes out clean. Allow the cake to cool for a few minutes before removing it from the pan. Then leave it on a wire rack to cool fully.
