Escalloped Beans And Corn

Green beans are a traditional holiday dish.  This recipe combines the beans with freshly cut green corn, adding a surprising texture and flavor.

1 Tablespoon(T)  flour
2 Tablespoon(T)  butter
1 Cup(c)  milk
1 Quart(q)  green corn
2 Tablespoon(T)  pork drippings
2 Quart(q)  green beans


String and cut 2 quarts green beans.  Cook until tender in salted water, in which 2 tablespoons of pork drippings has been added.  Take 1 quart of green corn, cut from the cob, and cook 15 or 20 minutes.  Put into a baking dish a layer of the beans, then a layer of corn, until the dish is full.  Mix a cup of milk, two tablespoons of butter and 1 tablespoon of flour, pour into the dish, put into oven and bake 30 minutes at 350 degrees F.
