Recipe Description
Make this brisket with your favorite homemade barbecue sauce or use bottled sauce. Whichever one you choose, be sure to have plenty on hand for extra flavor to serve with the brisket.

1 Tablespoon(T)  lemon pepper
1 Tablespoon(T)  cracked red pepper
1 Tablespoon(T)  cracked white pepper
1 Tablespoon(T)  cracked black pepper
1/2 Cup(c)  barbecue sauce
5 Pound(lb)  fresh beef brisket, well trimmed
2 Cup(c)  hickory wood chips


Cover wood chips with water and soak for 30 minutes. Drain wood chips. Prepare and heat smoker using wood chips. (For charcoal smoker, use 5 pounds charcoal briquettes.) Prepare Four Pepper Rub: Mix all pepper ingredients well. Rub pepper mixture into all sides of beef. Brush smoker rack with vegetable oil. Cover and smoke beef about 4 hours. Brush beef with barbecue sauce and continue smoking about 1 hour longer, or until meat thermometer reads 160°F.
