Ingredients

1 3/4 Cup(c)  all purpose flour
1/2 Teaspoon(t)  salt
1/2 Cup(c)  butter, chilled
1   egg yolk
1/4 Teaspoon(t)  lemon juice
2 Tablespoon(T)  iced water

Preparation

Sift the flour and salt into a large bowl. Add the butter and rub it into the flour with your fingertips until the mixture resembles fine bread crumbs and all of the fat has been incorporated completely. In a small bowl. mix the egg yolk, lemon juice and 2 tablespoons of iced water. Add to the flour mixture. Use a fork or flat bladed knife to mix and moisten. Press the dough into a rough ball. If the mixture is too dry to come together, add 1 tablespoon more water. Turn on to a floured surface. With the heel of your hand, push portions of dough away from you, smearing them on the surface. Continue in this way until the dough feels pliable and can easily be peeled off the surface. Form the dough into a ball, wrap in clear film (plastic wrap) and chill for 30 minutes. Roll out on a floured surface to the desired thickness and shape.
