Recipe Description
This citrus compote can be served with any pancakes, waffles, French toast, or even hot cooked oatmeal. One fourth of the compote provides 100 percent of your DV requirement for vitamin C.

Ingredients

1   orange
1   large red grapefruit
1/2 Cup(c)  sugar, divided
1 Cup(c)  orange juice, divided
1 Teaspoon(t)  vanilla
2   eggs
8 Slice(sli)  cracked wheat bread
2 Tablespoon(T)  butter

Preparation

Peel and chop orange and grapefruit and place in small bowl. In small saucepan, combine 1/4 cup sugar with 1/2 cup orange juice and bring to a simmer. Simmer for 5 to 6 minutes, or until slightly thickened. Pour over orange mixture and set aside. In shallow bowl, combine remaining 1/4 cup sugar with 1/2 cup orange juice, vanilla and eggs, and beat well. Heat a non stick pan over medium heat and add butter. Dip bread into egg mixture, turning to coat. Cook in hot butter over medium heat for 6 to 8 minutes, turning once, until bread is crisp and deep golden brown. Serve with citrus compote.
