1/2 Cup(c)  sugar, or to taste
1 Tablespoon(T)  lemon juice
1/2 Cup(c)  water
4 Cup(c)  strawberries or raspberries, hulled


In a food processor or blender, whirl berries until smoothly pureed. Pour puree into a strainer set over a bowl. Rub puree through strainer. Discard seeds. Return puree to food processor and add water, lemon juice and sugar. Whirl until sugar is dissolved, about 5 seconds. Pour into a shallow metal pan, cover and freeze until solid. Remove ice from freezer and break into chunks with a heavy spoon. In a food processor, whirl ice, about a third at a time, until a smooth slush forms. Use on and off bursts at first to break up ice, then whirl continuously. Or, place all ice in a large bowl and continue to break into small pieces with a heavy spoon. Then beat with an electric mixer until smooth, beating slowly at first, then gradually increasing mixer speed. Pour into a bowl, cover, and freeze for at least 1 hour or for up to 3 weeks. Before serving, let ice soften at room temperature for about 10 minutes.
