Recipe Description
Fresh mint is a delicious surprise in these unusually delicate cookies. Perfect with a cup of tea. 1/4 teaspoon mint extract can be substituted for the chopped mint leaves.

Ingredients

12 Ounce(oz)  mint chocolate chips
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
2 Cup(c)  all purpose flour
1   egg
1 Tablespoon(T)  mint leaves, finely chopped
3/4 Cup(c)  butter
1 1/3 Cup(c)  sugar

Preparation

Heat oven to 350° F. Mix sugar, margarine, mint leaves and egg in large bowl. Stir in flour, baking soda and salt. Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 11 to 13 minutes or until golden brown. Cool slightly. Remove from cookie sheet.
