Recipe Description
Prepared tart shells are usually available in the baking goods section of the supermarket. If you can't find them, you can line individual tart pans with graham cracker crumbs to create your own crust. For the sweetened cream of coconut, try coco casa or coco lopez.

8 Ounce(oz)  crushed pineapple, packed in juice, drained
3/4 Cup(c)  sweetened cream of coconut
1 Cup(c)  heavy cream
12   prepared individual graham cracker crumb crust tart shells


Place the pineapple and cream of coconut in a blender. Cover and blend until smooth. In a large bowl, beat the cream until stiff peaks form. Fold in the pineapple mixture. Spoon into tart shells. Freeze until firm.

Additional notes

Variation: Fold in 1 cup shredded sweetened coconut.
