Recipe Description
For this easy cake with a nutty crumb topping, use cherry, apple, or blueberry filling or any flavor you like. Aunt Sally made it often for unexpected guests, like my mother, who would "drop in" on weekday evenings when she just had to escape.

10 Tablespoon(T)  unsalted butter, at room temperature
1   unflavored vegetable cooking spray, for greasing
1 1/4 Cup(c)  sugar
2 1/4 Cup(c)  all purpose flour
1/2 Cup(c)  walnut or pecan pieces, chopped
2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
3   large eggs, at room temperature
1 Teaspoon(t)  pure vanilla extract
21 Ounce(oz)  fruit pie filling


Preheat the oven to 350°F. Grease an 8 inch square cake pan. Prepare the topping: Combine the butter, sugar, and flour in a bowl, and blend with a fork or your fingers until thoroughly combined. Stir in the walnuts and set aside. Prepare the cake: Sift the flour, baking powder, and salt together into a medium sized bowl. Set it aside. Cream the butter and sugar with an electric mixer on medium speed, scraping the bowl several times, until light and fluffy, about 2 minutes. Blend in the eggs, one at a time, scraping the bowl after each addition. Then blend in the vanilla. Reduce the speed to low and blend in the flour mixture until combined. Scrape three fourths of the batter into the prepared cake pan and level it off. Cover it evenly with the pie filling. (If you're using apple, it's a good idea to cut the thicker slices in half for more coverage.) Drop the remaining batter on top of the pie filling and spread it out as much as you can. (You won't be able to cover it all, so don't even try. Just do your best Jackson Pollock imitation. The crumb topping will cover it up anyway.) Sprinkle the crumb topping evenly over the top. Bake on the center oven rack until lightly browned, about 1 hour. Let the cake cool in the pan set on a wire rack. Cut the cake into squares, and serve it warm or at room temperature.
