Fun Fall Apple Crisp

Recipe Description
Just before the leaves turn red and amber, it's time to search out the first freshly picked apples of the season. Once you have the apples it is time for the crisp.

Ingredients

4 Pound(lb)  small granny smith or pippin apples, peeled, cored and cut into 1 inch slices
2   lemons, juiced
1 Cup(c)  whole wheat pastry flour
5 1/2 Cup(c)  light brown sugar, firmly packed
2 Tablespoon(T)  cinnamon, ground
8 Tablespoon(T)  salted butter, softened

Preparation

Position a rack in the lower third of the oven and preheat the oven to 375°F. Place the apple slices in a 9 by 13 inch baking pan. Add the lemon juice and toss to prevent the apples from discoloring. Place the flour, brown sugar and cinnamon in a medium sized bowl and whisk to blend. Add the butter. Using your fingers, blend the butter into the flour mixture until it resembles coarse meal. Sprinkle the topping evenly over the apples, but do not pack it down. Bake the crisp until the apples are tender when pierced with a fork, the juices bubble up around the edges of the baking pan, and the topping is crisp and brown, about 40 to 50 minutes. Serve the crisp hot or warm with vanilla ice cream or whipped cream, if desired.

Additional notes

If you frequently make apple crisps or applesauce, consider investing in an old fashioned apple peeler and corer ($30 or less from kitchen stores or on the Web). It's a metal contraption with a hand crank that attaches to a counter top with a suction cup or clamp. To use the apple peeler and corer, you secure an apple on the forked prongs and position the adjustable blade against the fruit. As you turn the crank, the apple revolves around the blade that simultaneously removes the peel and slices the apple into one long ribbon while cutting out the core.
