A girlfriend of mine form New York shared this recipe with me.  It is a fantastic way to doctor up pizza dough and complement almost any meal.

5 Clove(clv)  garlic, finely minced
1 Pinch(pn)  kosher salt, to taste
1 Pound(lb)  pizza dough
1 Tablespoon(T)  all purpose flour, for sprinkling on the work surface
1 Tablespoon(T)  cornmeal, for sprinkling on the baking sheet
1/4 Cup(c)  extra virgin olive oil, plus extra for oiling the dough


Coat the ball of dough lightly with olive oil and place it in a bowl that is large enough for the dough to expand to twice its size.  Cover the bowl with plastic wrap and set it aside in a warm spot until the dough has doubled in size, about 1 hour.  Meanwhile, toss the 1/4 cup olive oil with the garlic in a small bowl.  Cover and refrigerate it.  Preheat the oven to 425°F.  Lightly sprinkle a baking sheet (not nonstick) with cornmeal.  Place the dough on a lightly floured surface and punch it down.  Tum the dough over so both sides are lightly covered with flour.  Lightly flour a rolling pin, and roll the dough out to form a rectangle.  Ddo not be concerned with perfection here.  Transfer the dough to the prepared baking sheet and pull and stretch it to measure approximately 11 by 9 inches.  Strain about 2 tablespoons of the garlic mixture, cover and refrigerate it.  Brush the remaining oil and garlic mixture over the surface of the dough, and sprinkle it lightly with salt.  Using a pizza wheel, trace a rectangle about 3/4 inch in from the edges of the dough, creating a border.  Then score vertical strips, about 3/4 inch apart, within that border.   Be sure to score each slice all the way through to the baking sheet, but don't separate the strips.  Immediately place it in the oven and bake until lightly browned, about 20 minutes.  Brush the breadsticks with as much of the reserved oil as you wish, and serve them as they come out of the oven.
