Recipe Description
Served over polenta or brown rice, this dish makes a very satisfying meal.

Ingredients

1 1/2 Cup(c)  cooked black beans (cooked from dry; or canned, drained)
1 Cup(c)  vegetable broth
6 Cup(c)  broccoli florets
4 Clove(clv)  garlic, minced
1 1/2 Tablespoon(T)  olive oil

Preparation

In a large skillet, heat the oil over high heat. Add the garlic; cook, stirring, 10 seconds. Add the broccoli; cook, stirring, until tender crisp, about 4 minutes.

Add the broth and bring to a boil. Add the beans. Return to a boil and cook, stirring, until heated through, about 3 minutes.

Additional notes

Add 1 cup sliced red bell peppers when you add the broccoli.
