Ingredients

1 Pound(lb)  lean ground beef
2 Clove(clv)  garlic, minced
3 Tablespoon(T)  ketchup, divided
2 Tablespoon(T)  reduced-sodium soy sauce
1/3 Cup(c)  minced green onions
1/3 Cup(c)  minced fresh cilantro
1 Tablespoon(T)  grated fresh ginger
15 Ounce(oz)  black beans, drained and mashed
1/2 Teaspoon(t)  ground cumin
1/4 Teaspoon(t)  ground red pepper
6   (8-inch) flour tortillas, heated
12   spinach leaves, trimmed
1   vegetable cooking spray
8 Ounce(oz)  plain nonfat yogurt(toppings)
1/2 Cup(c)  diced tomatoes
1 Cup(c)  shredded lettuce
1/2 Cup(c)  cilantro leaves

Preparation

Cook ground beef and garlic in a large skillet until browned, stirring to crumble.

Drain in a colander; pat meat dry with paper towels. Return to skillet, and stir in 2 tablespoons ketchup, soy sauce, green onions, cilantro, and ginger; cook over medium heat, stirring frequently, until mixture is hot. Remove from heat; cover to keep warm.

Combine beans, remaining ketchup, cumin, and red pepper in a small saucepan; cook over medium-low heat, stirring constantly, until hot.

To serve, arrange 2 or 3 spinach leaves on each tortilla; spread evenlywith bean mixture, and top with ground beef mixture.

Roll up and serve immediately with desired toppings.
