Recipe Description
Some people can't get enough garlic. I can't get enough ginger. This beer is both sharp and sweet, and goes great with spicy meals.

Ingredients

1 Cup(c)  fresh ginger, chopped
5 Cup(c)  water
3 Tablespoon(T)  sugar
2 Tablespoon(T)  honey
1/4 Cup(c)  lemon juice
10 1/2 Cup(c)  sparkling water or seltzer

Preparation

The ginger can be chopped in a mini processor. Combine it with the water and sugar in a saucepan. Bring to a boil and keep at a full boil for 2 minutes. Turn off the heat and stir in the honey. Let cool completely. Strain the liquid through a fine mesh sieve, pushing on the solids to extract all the flavorful juice. Stir in the lemon juice and chill the liquid. Just before serving, stir in the sparkling water. The gingerade base can be kept chilled for a week and individual portions poured when desired. Mix 1/2 cup seltzer for each cup of gingerade base.
