1 1/2 Cup(c)  all purpose flour
2 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  cloves, ground
2 1/4 Teaspoon(t)  ginger, ground
1 Teaspoon(t)  salt
8 Tablespoon(T)  butter, softened
1 Cup(c)  granulated sugar
1/2 Teaspoon(t)  orange extract
1 Teaspoon(t)  baking soda
1 Cup(c)  applesauce
8 Ounce(oz)  cream cheese, softened
1 Teaspoon(t)  vanilla extract
1/2 Teaspoon(t)  orange extract
2 1/2 Cup(c)  confectioners' sugar


Preheat the oven to 350° F. Grease and flour a 9 by 5 inch loaf pan. To make the cake, in a medium bowl, mix together the flour, cinnamon, cloves, ginger and salt. Set aside. In a large bowl, cream the butter and granulated sugar until fluffy. Stir in the orange extract. Mix the baking soda into the applesauce and stir into the creamed butter mixture. Add the flour mixture. Mix until smooth in an elecrric mixer, 2 to 3 minutes. Pour the batter into the prepared loaf pan. Bake for 40 to 50 minutes, until a toothpick inserted in the center of the cake comes out clean. Transfer the cake to a rack and let cool completely. To make the frosting, beat the cream cheese until fluffy. Beat in the vanilla and orange extracts. Slowly beat in the confectioners' sugar. Once the cake has cooled, remove from the pan by placing a large cake plate over the pan and flipping it over. Spread the frosting evenly on top. Decorate with chopped candied orange peel or candied ginger, if desired.
