3 Cup(c)  unpeeled pears, chopped
1 1/4 Cup(c)  sugar
1/2 Cup(c)  vegetable oil
1 Tablespoon(T)  ginger root, finely chopped
3   eggs
3 Cup(c)  all purpose flour
3 1/2 Teaspoon(t)  baking powder
1 Teaspoon(t)  salt


Heat oven to 350 degrees F. Grease bottoms only of 2 loaf pans, 8 1/ 2 by 4 1/2 by 2 1/2 inches, or 9 by 5 by 3 inches. Mix pears, sugar, oil, ginger root and eggs in large bowl. Stir in remaining ingredients. Pour into pans. Bake 8 inch loaves about 65 minutes, 9 inch loaves about 50 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans and remove from pans. Cool completely on wire rack before slicing. Store tightly wrapped in refrigerator up to 1 week.
