Recipe Description
This is a good recipe to try if you want to slowly incorporate oats into your gluten free diet. Please choose an oat that is certified to be gluten free. Many mills process oats as well as wheat through a series of screens that separate (for the most part) the different grains.

1 Cup(c)  rolled oats
1 1/4 Teaspoon(t)  xanthan gum
1 Teaspoon(t)  vanilla extract
1/4 Teaspoon(t)  salt
1 Tablespoon(T)  baking powder
3/4 Teaspoon(t)  baking soda
1 Cup(c)  cornstarch
1 Tablespoon(T)  milk
1   egg
1/2 Cup(c)  dark brown sugar
1/4 Pound(lb)  butter


Preheat the oven to 375°F. Grease a cookie sheet. Cream the butter and sugar in a medium sized bowl. Add the egg. Mix until light and thick. Add the other ingredients. Beat until thick and creamy. Drop by rounded teaspoonfuls onto the prepared pan. Press to a 1/4 inch thickness with moistened fingertips. Bake for 9 to 10 minutes, until lightly browned. Transfer from the cookie sheet to a rack and let cool completely.
